아몬드(almond)




아몬드 나무의 열매인 아몬드는 캘리포니아, 지중해 , 호주, 남아프리카 공화국등지에서 광범위하게 재배된다.

아몬드는 두가지 종류가 있는데,

견과류로 먹는 달콤한 맛과  추출액, 시럽,  리큐어(술)에 사용하는 쓴맛이 있다.

쓴맛 아몬드는 생견과에 함유된 치명적인 시안화수소산으로 인해 

미국에선 판매가 법으로 금지되어있다.

영양가/ 메디컬 효능

아몬드 가루 1 컵은 표준 10g 식이 섬유가 포함된  탄수화물 20g이 포함되어 저 탄수화물 식품이다.

따라서 체중조절등의 탄수화물 제한 식이 요법에는 밀가루대신 아몬드가루를 쓰는 것이 바람직하다.


 비타민 E, 단백질,식이 섬유, 비타민 B , 필수 미네랄 과 불포화 지방이 풍부.

아몬드는 콜레스테롤 저하, 암, 피부에 좋은것으로 알려져 있고,

심장 질환과 관련된 여러 위험요인을 낮출 수있는 것으로 나타났다.

아몬드에는 플라 보놀 , 히드록시산 등 특정 과일과 야채의 것과 유사한  항산화 성분인, 폴리페놀이 들어 있다.

선택방법 : 표백한것, 무표백, 천연, 설탕입힌것, 자른것, 훈제맛, 아몬드페이스트 등 다양.

준비 방법 : 요리에 사용하기 전에 볶아주면 향미가 증진.

잘 어울리는 음식: 사과 , 살구, 카라멜, 초콜릿 , 코코넛, 크림, 매실 , 자두 , 건포도, 쌀, 딸기.

A standard serving of almond flour, 1 cup, contains 20 grams of carbohydrates, of which 10 g is dietary fiber. 

This makes almond flour very desirable for use in cake and bread recipes by people on carbohydrate-restricted diets.

Almonds are a rich source of vitamin E, containing 26 mg per 100 g.

An ounce of almonds contains 12% of necessary daily protein.

They are also rich in dietary fiber, B vitamins, essential minerals and monounsaturated fat.

almonds also contain phytosterols, associated with cholesterol-lowering properties.

Potential health benefits, include improved complexion and possibly a lower risk of cancer.

A preliminary trial showed that using them in the daily diet might lower several factors associated with heart disease, including cholesterol and blood lipids.

Almonds contain polyphenols in their skins consisting in a combination of flavonols, flavan-3-ols, hydroxybenzoic acids and flavanones analogous to those of certain fruits and vegetables.


Almonds may cause allergy or intolerance. 

Cross-reactivity is common with peach allergens and tree nut allergens. 

Symptoms range from local symptoms (e.g., oral allergy syndrome, contact urticaria) to systemic symptoms including anaphylaxis (e.g., urticaria, angioedema, gastrointestinal and respiratory symptoms).


Season: available year-round

How to select: Available blanched, unblanched, whole, sliced, chopped, candied, smoked, in paste form, and many flavors.

How to prepare: Toasting before use in a recipe will intensify the flavor.

Matches well with: apples, apricots, caramel, chocolate, coconut, cream, plums, prunes, raisins, rice, strawberries

Substitutions:  2 tbsp ground almonds=1/4 tsp almond extract for flavoring only
