WINE(와인)이라는 용어의 뜻(Apple Cider와 Apple Wine 비교)

영어 단어 WINE 와인은 게르만어 * winam, 또는 라틴어의 Vinum 이 어원으로 

"와인"또는 "VIne, 포도 나무"라는 뜻이다.


사과나 열매 등의 과일으로 만든 와인도 

 "와인"이란 이름과 함께 과일의 이름뒤에 붙여 명명된다

 (예를 들어, 사과 와인,딱총 나무 열매 와인 등);

이는, 일반적으로는 과일 와인이나 시골 와인이라고 불린다.



애플 와인과 애플 사이더의 차이는?

둘다 발효하는 것은 맞지만, 와인기법(설탕과 이스트)로 발효하여

알콜함량이 더 많은 것이 사과와인이고, 즙을 압착하여 

그대로 단기/장기(최대 6개월) 발효한것이 사이더인데,

사이더에도 알콜이 포함될수 있어, 미국에서도 이둘사이의 정의는 모호하다.

사이다는 cyder (/ saɪdər / SY-dər) 필터링되지 않은 사과주스로 만든 발효 알코올 음료이다. 

사이다 알코올 농도는 영국의 경우, 1.2 %~ 8.5 %이고,  유럽대륙 사이다는 ~ 3.5 %12 %. 


애플 사이더 협회(CAMRA)에서는 "진짜 사이다는" 90 % 이상, 신선한 사과 주스를 사용해야 한다고 함에도,

영국 법에서는 적어도 35 % (신선 또는 농축액) 사과 주스를 포함해야하고,

미국에서는 50 %, 프랑스에서는 사과만으로 해야한다는 법률을 정하고 있다.


2014 년, 데일리 텔레그래프의 연구에서는 시장 사이다의 1 파인트 (약 500ml의 Bulmers)에는 

다섯 스푼 (20.5g)의 설탕이 포함되어, 세계 보건기구(WHO)의 성인의 일일 설탕 권장량에 해당하며,

맥주라거와 엘보다 5 ~ 10 배의 설탕이 들어 있다고 했다.


미국과 캐나다의 일부 지역에서 말하는 "하드 사이다"는 알코올 음료로 지칭하고,

그냥 "사이다"라고 하면, 일반적으로 비 알콜을 의미하는데, 

달콤한 신맛의 필터링되지 않은 사과 주스를 말한다.


발효 전에 설탕이나 과일의 추가는 음료의 알코올 함량을 증가시킨다. 

 (> 10 %)의 높은 알코올 농도의 사과 음료는 "사과 와인"이라고 한다.


모든 사과는 사이다 제작에 사용할 수 있지만,

사이다 만들기 위해 특정 품종을 재배하기도 한다. 

사이다는 특히 영국에서 유명한데, UK는 세계에서 가장 높은 사이더 소비뿐만 아니라 

사과주 생산 회사(H. P. Bulmer)를 가지고 있다.. 


북부 스페인, 북부 프랑스와 같은 다른 유럽 국가에 인기 출신이다. 

독일, 폴란드, 스웨덴어, 아일랜드, 아르헨티나, 호주에서도 사이더가 인기있다.


사이더와 유사한 배 주스를 발효해 만든 것을 페리 혹은 배 사이다라고 하는데,

(CAMRA)등 일부 조직에서는 이 용어에 대해 사이더와 페리 양쪽에 손해를 끼친다고 비난한다.


Cider or cyder (/ˈsaɪdər/ sy-dər) is a fermented alcoholic beverage made from the unfiltered juice of apples. 

Cider alcohol content varies from 1.2% ABV to 8.5% or 

more in traditional English ciders, and 3.5% to 12% in continental ciders.


In UK law, it must contain at least 35% apple juice (fresh or from concentrate),

although CAMRA says that "real cider" must be at least 90% fresh apple juice.

 In the US, there is a 50% minimum.

 In France, cider must be made solely from apples.


 In 2014, a study by The Daily Telegraph found 

that a pint( about 500ml) of mass-market cider (Bulmers) 

contained five teaspoons (20.5g) of sugar, 

nearly as much as the WHO recommends as an adult's daily allowance of added sugar, 

and 5-10 times the sugar in lager or ale.


In the US and some parts of Canada, the alcoholic beverage discussed in this article is 

commonly known as "hard cider", 

while "cider" usually refers to a non-alcoholic unfiltered apple juice with a distinct sweet-tart taste. 


The addition of sugar or extra fruit before a second fermentation increases the alcoholic 

content of the resulting beverage. 

An alcoholic apple beverage with higher alcohol content (>10%) is an "apple wine".


The juice of any variety of apple can be used in cider making, 

but particular cultivars grown for cider making are known as cider apples.

Cider is popular in the United Kingdom, especially in the West Midlands, 

South West England and East Anglia, and is available in most corners of the country. The UK has the highest per capita consumption, as well as the largest cider-producing companies in the world,

 including H. P. Bulmer, the largest.

As of 2006, the UK produces 600 million litres per year (130 million imperial gallons).


The beverage is also popular and native to other European countries like Ireland, Northern France (in particular Brittany and Normandy) and Northern Spain and the Basque Country. Central Europe also has it own particular types of cider. Germans in Rhineland-Palatinate and Hesse (Frankfurt am Main) drink it as does the country that is Europe's largest producer of apples, Poland. Jabłecznik is just recently gaining in popularity and high quality Polish apple concentrate is commonly used for English, Swedish, and Irish cider manufacturing.


Argentina is also a cider-producing and -drinking country, especially the provinces of Río Negro and Mendoza. 

Australia also produces cider, particularly on the island of Tasmania, 

which has a strong apple-growing tradition.


A similar product made from fermented pear juice is called perry, 

or sometimes pear cider;

Some organisations (such as CAMRA) argue that the term "pear cider" damages both cider and perry.



포도가 당도, 산도, 효모함량에서 가장 와인을 만들기 최적의 조건을 지녀서

역사적으로 오랫동안 와인의 재료로 사용해 왔다.

전통적 와인 제조에 사용하는 포도 품종말고, 대부분의 천연 과일에는 

발효를 촉진하는데 필요한  적합한 당분함량(당도)산도, 효모나 이들 3가지의 조합의 역량이 부족하다.

이것은 아마도 포도 와인이 역사적으로 다른 종류의 과일 와인보다

훨씬 더 유행하고있다하는 주요 이유 중 하나이다.


보리 와인이나 막걸리 (쌀와인)와 같은 와인은 전분 계 소재로 만든 와인이고,

와인공정보다는 맥주 공정에 가깝다. 또한, 생강 와인은 브랜디로 강화된다;

이 경우 와인생산 공정보다는 알콜생성이라는 것에 가깝다.

 

영어 "와인"에 대한 용어의 상업적 사용은 여러 국가에 법률에 의해 보호된다.


The English word "wine" comes from the Proto-Germanic *winam, 

an early borrowing from the Latin vinum, "wine" or "(grape) vine"...


Wines from other fruits, such as apples and berries, are usually named after the fruit from which they are produced combined with the word "wine" (for example, apple wine and elderberry wine) and

are generically called fruit wine or country wine (not to be confused with the French term vin de pays). 


Besides the grape varieties traditionally used for winemaking, 

most fruits naturally lack either a high amount of fermentable sugars, relatively low acidity, 

yeast nutrients needed to promote or maintain fermentation or a combination of these three characteristics. 

This is probably one of the main reasons why wine derived from grapes has historically been more prevalent by far than other types and why specific types of fruit wine have generally been confined to regions in which

 the fruits were native or introduced for other reasons.


Other wines, such as barley wine and rice wine (e.g. sake), are made from starch-based

materials and resemble beer more than wine, 

while ginger wine is fortified with brandy.

 In these latter cases, the term "wine" refers to the similarity in alcohol 

content rather than to the production process.


The commercial use of the English word "wine" is protected by law in many jurisdictions
