스위스 차드(근대)

시금치 근대 또는 실버비트(silverbeet)로 알려진 

근대는 사탕무잎과 매우 유사한 차드는 지중해 요리에 사용되는 잎이 많은 녹색 채소.

잎은 녹색 또는 상추와 같은 붉은 색이 될 수 있다.

근대 줄기는 여러색상이다.

신선한 어린 차드는 샐러드에 생으로 사용.

성숙한 근대 잎과 줄기는 볶음 (pizzoccheri)요리에 쓰인다.

이집트 요리에서 근대는 맑은 국물에 토란 뿌리, 고수와 함께 조리한다. 


학명 : 베타 불가리스, Cicla 그룹. 

차드는 지중해 지역의 연간 작물로 널리 재배 채소이며 6월~ 11월까지 재배. 


근대의 효능과 주요 성분

근대는 시금치와 같은, 건강, 질병 예방 속성을 가지고 있다.

칼로리가 매우 낮아 콜레스테롤 제어와 체중 감소 프로그램에 권장.

골다공증, 철 결핍 성 빈혈, 비타민-A 결핍 방지 성분.

심혈관 질환과 대장암, 전립선 암 예방식물


차드의 잎 성분/

항산화 비타민, 비타민 C의 훌륭한 소스.

신선한 잎은 100g 당 일일권장 수준의 약 33 %를 제공한다. 

강력한 수용성 항산화, 비타민 C는 활성 산소와 활성 산소 종 (ROS)을 해소하는 데 도움이 된다. 

비타민 C가 풍부한 식품의 일반적인 섭취는 철분 결핍을 방지하고, 면역을 증폭하여 병원체에 대한 저항을 강화한다.

근대의 비타민 K는 100g당 권장 섭취량의 700 %를 제공.

비타민 K는 뼈 형성과 강화활동, 다이어트에 도움.

기타 성분/

오메가 -3 지방산이 풍부한 소스; 

ß-카로틴, α-카로틴, 루테인 및 ZEA-xanthin 같은 비타민-A,  플라보노이드 항산화. 카로틴은 몸 안에서 비타민 A로 변환한다.

신진 대사 기능에 필수적인 엽산, 나이아신, 비타민 B-6 (피리독신), 티아민 판토텐산 등의 비타민 B 복합체도 풍부.

구리, 칼슘, 나트륨, 칼륨, 철, 망간 및 인 같은 미네랄 풍부한 소스이다. 

칼륨과 나트륨은  심박수 및 혈압을 조절하고 세포와 체액의 중요한 구성 요소이다. 

망간은 산화를 억제하는 효소인 슈퍼 옥사이드 디스 뮤 타제와 함께 신체에 사용.

철은 세포의 산화 및 적혈구 형성에 필요.

**옥살산oxalic acid.

에탄디산이라고도 함. 독성이 있는 무색의 결정성 유기화합물.

세탁할 때 산성 섬유린스로 사용한다. 

불용성 철 화합물이 물에 녹는 착이온으로 전환될 수 있기 때문에 녹과 잉크의 얼룩을 제거하는 데 효과적이다. 

자동차 방열기에 생기는 철의 산화물 피막을 제거할 때도 쓰이는데, 많은 상업용 제품의 주요성분이다. 

옥살산의 화학식은 (COOH)2이며, 보통 결정성 수화물(COOH)2·2H2O의 형태로 존재한다.

17세기에 괭이밥의 성분으로 알려진 옥살산은 1776년 최초로 합성되었다.

Swiss Chard 

Chard (Beta vulgaris subsp. cicla), is a leafy green vegetable often used in Mediterranean cooking. The leaves can be green or reddish in color like Bibb Lettuce; chard stalks also vary in color.[3] Chard has been bred to have highly nutritious leaves and is considered to be one of the most healthful vegetables available, making it a popular addition to healthful diets (like other green leafy vegetables).

Chard has been around for centuries, but because of its similarity to beets it is difficult to determine the exact evolution of the different varieties of chard.

Culinary use[edit]

Fresh young chard can be used raw in salads. Mature chard leaves and stalks are typically cooked (like in pizzoccheri) or sauteed; their bitterness fades with cooking, leaving a refined flavor which is more delicate than that of cooked spinach.[citation needed]


In Egyptian cuisine, chard is commonly cooked with taro root and coriander in a light broth.

Swiss chard is high in vitamins A, K and C, with a 175 g serving containing 214%, 716%, and 53%, respectively, of the recommended daily value.[11] It is also rich in minerals, dietary fiber and protein.


All parts of the chard plant contain oxalic acid.

If you eat tofu with spinach, the oxalic acid in spinach removes the calcium from tofu. 


Health benefits of Swiss chard

Swiss chard, like spinach, is the store-house of many phytonutrients that have health promotional and disease prevention properties.

Chard is very low in calories (19 kcal per 100 g fresh, raw leaves) and fats, recommended in cholesterol controlling and weight reduction programs.

Chard leaves are an excellent source of antioxidant vitamin, vitamin-C. Its fresh leaves provide about 33% of recommended levels per 100 g. As a powerful water-soluble antioxidant, vitamin C helps to quench free radicals and reactive oxygen species (ROS) through its reduction potential properties. Research studies suggest that regular consumption of foods rich in vitamin C help maintain normal connective tissue, prevent iron deficiency, and also help the human body develop resistance against infectious agents by boosting immunity.

Chard is one of the excellent vegetable sources for vitamin-K; 100 g provides about 700% of recommended intake. Vitamin K has potential role bone health by promoting osteotrophic (bone formation and strengthening) activity. Adequate vitamin-K levels in the diet help limiting neuronal damage in the brain; thus, has established role in the treatment of patients suffering from Alzheimer's disease.

It is also rich source of omega-3 fatty acids; vitamin-A, and flavonoids anti-oxidants like ß-carotene, α-carotene, lutein and zea-xanthin. Carotenes convert to vitamin A inside the body.

It is also rich in B-complex group of vitamins such as folates, niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid that are essential for optimum cellular metabolic functions.

It is also rich source of minerals like copper, calcium, sodium, potassium, iron, manganese and phosphorus. Potassium is an important component of cell and body fluids that helps controlling heart rate and blood pressure by countering effects of sodium. Manganese is used by the body as a co-factor for the antioxidant enzyme, superoxide dismutase. Iron is required for cellular oxidation and red blood cell formation.

Regular inclusion of chard in the diet has been found to prevent osteoporosis, iron-deficiency anemia, and vitamin-A deficiency; and believed to protect from cardiovascular diseases and colon and prostate cancers.
